This is “Day 3” of my Fall CKLS Cleanse. I have made it past the most difficult day and now I am feeling a sense of calm. Waking up earlier and feeling much more energetic than before I started the cleanse.
Because I love fresh vegetables, it has not been difficult for me to forgo eating meat, fish or poultry. So far, salads have been my mainstay, however, the cool weather has caused me to have a desire for something warm – Cabbage Soup. If you will recall, Cabbage Soup is an item listed as a “permitted” staple on the list of foods allows while taking CKLS. The benefits of Cabbage Soup are numerous. 1 tablespoon olive oil or canola oil
2 onions, chopped
1 shallot, chopped
½ green pepper, chopped
2 cloves chopped garlic
2 celery ribs, chopped
2 carrots, chopped
3 tomatoes, chopped
1 small cabbage, chopped
3 tablespoons instant chicken or vegetable bouillon granules
1/2 teaspoon salt
1/2 teaspoon pepper
12 cups boiling water (3 quarts)
2 tablespoons chopped fresh parsley
3-4 dashes Tabasco (optional)
Heat oil over medium heat; add onion, shallot, garlic and celery.
Saute for 10 minutes or until onions become transparent. Do not burn.
Add rest of ingredients; bring to a boil.
Turn down heat to medium-low and let simmer for 45 minutes to 1 hour. Taste to see if you want to add and more seasoning.
Add parsley and Tabasco and simmer a few minutes.
Remove from heat.
